I used to love to cook these great Sunday Dinners. You know the ones that everyone wanted to come to because the food was just so plentiful and delectable. Did you notice I said I used to love doing this? Well things have changed in our household the last few years and those great big Sunday dinners have been reduced to just the tow of us and occasionally my MIL will join us for Sunday dinner. This has led me to no longer love cooking that huge family dinner. I have started to simplify my Sunday dinners. If I can put it in a slow cooker then it is even better. We attend church in a 3 hour block of time so the slow cooker has become a close friend of mine!
I was shopping at my local Walmart and came across Smithfield Marinated Fresh Pork in the meat section.
I think I have struck oil! The pork is already marinated for me. Score! one less thing for me to do. Smithfield Marinated Fresh Pork Shoulder Seasoned Carnitas now this is right up my ally. I can make great Mexican dishes and this Slow Cooker Pork Carnitas Stew starts with Smithfield Marinated Fresh Pork Shoulder Seasoned Carnitas.
My Slow Cooker Pork Carnitas Stew could not be simpler! I love using my slow cooker just “set it and forget it.” This is perfect for me who no longer loves cooking!! Ok I still like to cook especially with my slow cooker! As I mentioned before I can find all my ingredients at my local Walmart. You can serve the stew with warm tortillas and fresh sour cream I love a touch for fresh chopped cilantro. The stew would be great rolled up for a burrito too!
Slow Cooker Pork Carnitas Stew
Ingredients
- 1 PKG Smithfield Marinated Fresh Pork Shoulder Seasoned Carnitas
- 1 10 Oz can Diced Tomatoes & Green Chilies
- 1 16 oz jar or can Roasted Green Chiles salsa
- 3 TBS cornstarch
- 1/2 cup cold water
- Fresh Cilantro sour cream,tortillas,chopped onions, chopped tomatoes for garnish.
Instructions
- Place Smithfield Marinated Fresh Pork Shoulder Seasoned Carnitas in slow cooker and cook on high for 4 hours.
- After 4 hours remove meat from slow cooker and allow to cool. Cut into bite size pieces and return back to slow cooker. Add in Diced Tomatoes & Green Chilies and Roasted Green Chiles cook on high for 2 additional hours.
- Mix cornstarch and water in small bowl and stir into stew. Continue to stir until stew thickens. Serve in bowls with garnish of choice.
