I have to say I love being a Smart & Final Smarties!! I was given the challenge to create a recipe using #LaRomanella products found at Smart & Final. I was so excited to be a part of this I love to cook!!
So here is what I came up with!!
I call it Broken Lasagna because it reminds me of lasagne all mixed up!!LOL!!
Broken Lasagna
1 Jar #LaRomanella Basil Tomato Pasta Sauce
2 cups #LaRomanella Penne Rigate Pasta
6 cups boiling water
¼ c #LaRomanella Grated Parmesan Cheese plus extra for garnish
1 ½ c. cottage cheese
1 t #LaRomanella Chopped garlic
1T #LaRomanella Olive oil
½ t Italian seasoning
2 C grated Mozzarella cheese
Prepare #LaRomanella pasta according to package directions add #LaRomanella olive oil to water to keep pasta from sticking together. Do not over cook. While pasta is cooking combine the cottage cheese, #LaRomanella Parmesan cheese, #LaRomanella chopped garlic, Italian seasoning, mix until blended. You can add salt and pepper to this if you would like. Grate the mozzarella cheese if needed. (I use the shredded you can buy at Smart & Final).
Preheat oven to 350 degrees.
When Pasta is done, drain well. Toss the pasta with the jar of La Romanella Tomato Basil sauce. Spray a 3 quart baking dish with cooking spray (Pam). Spoon ½ of the pasta/sauce mixture in bottom of baking dish and spread out evenly, take the cottage cheese mixture and layer on top of the pasta. Sprinkle 1 cup of grated mozzarella cheese over cottage cheese layer. Repeat with remaining pasta/sauce mixture and top with remaining mozzarella cheese and sprinkle with #LaRomanella Parmesan cheese.
Bake in oven for about 25-30 mins or until hot and bubbly.
Now you cant have pasta without yummy warm garlic bread so I came up with this yummy bread recipe.
Garlic Parmesan Pull Apart Bread
Heat oven to 350 degrees
1 Round loaf bread Uncut (you can use the bread of your choice as long as it is a round uncut loaf or you can find the Sourdough Square loaf the key is that in needs to be uncut.)
1 cube butter softened
1T #LaRomanella Chopped Garlic
¼ C #LaRomanella Grated Parmesan Cheese
Take the butter, #LaRomanella cheese and #LaRomanella garlic and mix well. Set aside. Take your loaf of bread and carefully slice it but DO NOT cut throught the bottom crust. Using ½ of butter mixture spread each slice with mixture. Now carefully slice the bread again going across the slices at a 90 degree angle. If this doesn’t make sense take a look at the photo it will make sense. After you have sliced the bread again your going to spread the new slices with the remaining butter mixture. I used my hands for this it was just easier. Carefully place loaf on 2 layers of foil that are large enough to cover the sides of the bread. I sprinkled the top of the loaf with more#LaRomanella parmesan cheese and a little La Romanella olive oil. Wrap the foil up around the loaf but leaving the top uncovered. This lets it get brown and crunchy!! Place in oven for 15 to 18 mins or until it is golden brown on top and heated through.
I served the Broken Lasagne and Garlic Parmesean Cheese Bread with a tossed Green Salad with #LaRomanella Balsamic Vinegar and #LaRomanella Marinated Artichokes!! Oh man was I in heaven!!
