Evil Eye Cupcake

Ingredients
  

  • 1 Box Pillsbury® Perfectly Pumpkin Cake Mix
  • 1 cup milk
  • 1 small box pumpkin spice pudding mix
  • 3 large eggs
  • 1/2 cup oil
  • 1 t vanilla
  • cheesecake filling
  • 8 oz cream cheese
  • 1/4 cup powdered sugar
  • 1/2 cup chopped nuts
  • 1/4 cup mini chocolate chips
  • 1/4 cup pumpkin spice chips

Method
 

  1. Prepare cake mix according to package directions, substituting the milk for water and adding the dry pudding mix.
  2. Line cupcake pans with paper liners. Add 2 Tbs cake batter to each cup. Drop about 1 tsp of cheesecake mixture on top of batter. Then add another 1 Tbs on top of the whole cupcake. Bake in preheated oven for 20-25 minutes or until cupcake springs back when touched. As the cupcake cools it will sink a bit in the center. Just fill that with extra frosting.
