Black Bean and Corn Salsa Verde

Ingredients
  

  • 1 cup 505 Southwestern Hatch Valley Green Chile Salsa
  • 1 can Ro Tel tomatoes
  • 1 small yellow onion
  • 1/2 cup fresh cilantro
  • juice of one lime
  • 1 Tbs chopped garlic
  • 1 tsp salt
  • 1/2 cup black beans rinsed
  • packet of corn from Eat Smart Gourmet Vegetable Salad Kit

Method
 

  1. Place first seven ingredients in food processor and pulse until desired consistency is achieved.
  2. Add in beans and corn stir to incorporate into salsa. (corn will re-hydrate)
  3. Drizzle on salad. Enjoy
