Spicy Breakfast Taquitos

Ingredients
  

  • 1 Pkg Smithfield Breakfast Sausage cooked
  • 4 large eggs
  • 1 Tsp Taco Seasoning
  • 2 TBSP Butter
  • salt and pepper
  • 1 1/2 cups shredded cheese cheddar pepper jack or Monterey jack
  • 1/4 cup slice scallions
  • 10 white corn tortillas or use 6'' flour tortillas
  • 3-4 TBSP Olive Oil

Condiments

  • Salsa
  • Sour Cream
  • grated cheese
  • Guacamole

Instructions
 

  • Preheat oven to 425 degrees F.
  • Place Sausage on baking sheet and bake until cooked through. (I like to bake the sausage so it frees me up to cook and prepare the other components of the dish)
  • Place 2 TBS butter in frying pan over medium heat.Crack eggs into a bowl and add a splash of water and taco seasoning,whisk well with a fork and then add to the pan. Cook until eggs are no longer wet, tossing and scrambling as they cook. Remove from heat.
  • Warm the tortillas inside of a damp paper towel for 10-15 seconds in the microwave. Divide the scrambled eggs among the tortillas and top with shredded cheese and scallions. Place a sausage link on top. Roll up and place, seam side down, on a baking sheet lined with foil or parchment paper. Brush with olive oil and bake for 10-15 minutes or until golden brown. Serve with salsa and other condiments.
