I love Mexican food and I love breakfast so I decided to combine the two and came up with these easy Spicy Breakfast Taquitos. They are super fun to eat even your kids will love them.

These Spicy Breakfast Taquitos take just a bit of prep time but once that is all done you just assemble and bake. I uses a cookie sheet and placed my warmed tortillas on it then started building my taquitos.

I tried not to fill the tortillas too full so I could still roll them up! This would be a great time to get they kids involved they would love building their own taquito! Now if you don’t like spice leave out the taco seasoning in the scrambled eggs and your good to go.

As I mentioned everything is pretty much precooked so once they go into the oven its just a matter of heating so the cheese gets all melty and gooey! Like all my recipes feel free to change the ingredients to suit you and your family’s tastes.

Serve these with your favorite toppings. I served mine with green and red salsa, fresh chopped cilantro, sliced green onions and of course sour cream. - Preheat oven to 425 degrees F.
- Place Sausage on baking sheet and bake until cooked through. (I like to bake the sausage so it frees me up to cook and prepare the other components of the dish)
- Place 2 TBS butter in frying pan over medium heat.Crack eggs into a bowl and add a splash of water and taco seasoning,whisk well with a fork and then add to the pan. Cook until eggs are no longer wet, tossing and scrambling as they cook. Remove from heat.
- Warm the tortillas inside of a damp paper towel for 10-15 seconds in the microwave. Divide the scrambled eggs among the tortillas and top with shredded cheese and scallions. Place a sausage link on top. Roll up and place, seam side down, on a baking sheet lined with foil or parchment paper. Brush with olive oil and bake for 10-15 minutes or until golden brown. Serve with salsa and other condiments.
