Peanut Butter Truffle Snowballs

Ingredients
  

  • 2 1/2 cups softened confectioners' sugar
  • 1 cup smooth peanut butter
  • 5 tablespoons unsalted butter melted
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 1 Lb Merkens White Coating Melting Wafer

Instructions
 

  • Beat the confectioners' sugar, peanut butter, melted butter, vanilla extract and salt with an electric mixer until well combined. Roll rounded teaspoons of the mixture into round balls and place on a parchment-lined baking sheet. Chill until firm, about 20 minutes.
  • Meanwhile, melt the candy coating in a microwave-safe bowl. Dip balls in melted white candy coating, and place on waxed paper to harden. You can drizzle with additional melted candy Yield: 2 dozen.
