Pumpkin Spice Bread Pudding

Ingredients
  

  • Pudding
  • 1 C Granulated Sugar
  • 1 C Brown Sugar
  • 2 C Milk
  • 5 large eggs beaten
  • 2 t vanilla
  • 8 C cubed day old Texas Toast see ** note
  • 1 T Pumpkin Pie Spice
  • 1 C Pumpkin Puree
  • Topping
  • 1 C Brown Sugar
  • 1/4 C soft Butter
  • 1 t Pumpkin Pie Spice
  • Sauce
  • 1 C Brown Sugar
  • 1/2 cup butter
  • 1 egg beaten
  • 2 t vanilla

Instructions
 

  • Pudding:
  • Mix together sugar, eggs, milk, vanilla, spices and pumpkin until well blended. Add bread and stir to cover the bread with custard. Let sit for 10 minutes.
  • Topping:
  • Crumble together sugar, spices and mix in softened butter. I use my fingers to mix the butter into the sugar.
  • Pour pudding mixture into 9x13" pan sprayed with Pam cooking spray. Sprinkle topping mixture over top of pudding. Bake in 350 degree oven for 35-45 minutes until middle of pudding is firm.
  • Sauce:
  • Mix together sugar, butter, egg, spices and vanilla in sauce pan heat over medium heat until sugar is melted. Pour over warm pudding. Serve warm or cold. Top with whipped cream.
