If you have been following along I am wrapping up my 3 post series with Ling Ling Asian Entrees. Today I am taking a trip to Thailand! Ok maybe not but this Slow Cooker Thai Pork will make you think you are there. As with most of my slow cooker recipes I started this one about 11am.
Now the reason I wanted to use a Thai inspired recipe is because Ling Ling has a Thai-Style Chicken Fried Rice and the Thai Pork will be the perfct compliment to the Ling Ling Thai-Style Chicken Fried Rice. We have continued to enjoy Ling Ling’s delicious entrees. I love having them in my freezer they are perfect to have on hand. Now they don’t just have Fried Rice dishes but they have Chicken Yakisoba, Drunken Noodles with Chicken and two dumpling varieties,Chicken Dumplings in Chili Sauce and Pork Dumplings in Chili Sauce.

Ok so lets talk about the Thai Pork. This pork is so easy to make its pretty much a no brainer. Put it in the slow cooker and let it cook then when its just about done add in a few ingredients and then serve. Pretty easy! One flavor that is predominant in Thai recipes is peanut butter. This is really my first time to work with peanut butter in a savory dish. I am very familiar with using peanut butter in baked goods. I have to say I am pretty please with how simple this recipe is and how delicious it turned out. You can serve it with just the Ling Ling Thai-Style Chicken Fried Rice.
Slow Cooker Thai Por
Ingredients
- One 2 lb. boneless pork loin or pork roast
- 1 green bell pepper cut into strips
- 1 red bell pepper cut into strips
- 1/2 cup prepared Teriyaki sauce
- 2 T. rice vinegar
- 1 tsp. red pepper flakes
- 3 cloves garlic
- 3 T. creamy peanut butter
- 1/2 cup chopped cilantro
- 1/2 cup chopped green onion
Instructions
- Place pork, Teriyaki sauce, rice vinegar, garlic, and red pepper flakes in slow cooker.
- Cook on low for 6-8 hours.
- Remove meat from the slow cooker and shred.
- Stir peanut butter into the remaining liquid.
- Add sliced peppers, and return meat to slow cooker.
- Cook approximately 30 minutes until peppers are slightly cooked, but still crisp.
- Just before serving, stir in green onion and cilantro.
