Mini Sand Castle Cupcakes

Summer is here and there is so much still to do! These adorable Mini Sand Castle Cupcakes were inspired by a television show I watch regularly.  They shared how to make a sand castle cake and I thought I can make cute mini Sand Castle Cupcakes and today I am going to show you how you can make these too!

Bake up your favorite cupcakes using your favorite cake recipe and use your favorite buttercream frosting to assemble and decorate the cupcake. You can also use store bought frosting if you don’t want to make your own! Are you ready to get started? Here is your supply list.

Supplies:

  • miniature ice cream cones
  • cupcakes
  • buttercream frosting
  • “sand” see recipe below
  • fruit treats
  • toothpicks
  • peppermint puff candies
  • other small candies as desired

I started with making the little flags that go on top of the cupcakes. They are so easy I used fruit snacks cutting them first in 1″ strips, then folding over the bamboo skewer then I cut with scissors to resemble little flags.

Ok on to frosting and sanding your cupcake. You will want to first frost the outside of the mini ice cream cone with your butter cream then cover with your “sand”

Frost the top of the cupcake then place the mini sand castle on top of the cupcake just off to the side. Cover the frosting around the castle with more “sand.”

Take the peppermint puff candy which is your “beach ball”and put a small dollop of frosting on the bottom and place on the cupcake, add any other small candies by the “beach ball”

Gently push the skewer in the top of the sand castle to top with a flag. Repeat on the rest of your cupcakes and watch the kiddos faces light up because they get to eat a “Sand Castle!”

Ingredients

  • 2 cups ground graham crackers
  • 2 cups coconut, toasted and finely ground

Instructions

For the "sand"

Preheat oven to 350 degree

Place the coconut onto a baking sheet lined with parchment paper and spread it out so it is in an even layer

Place in the oven for 5-10 minutes or until lightly toasted, and the color of sand you are looking for

Allow to cool

Place the graham crackers and the cooled toasted coconut into a food processor and process until it if finley ground and looks like sand!
