I know it is getting late and if your like me I am the worlds best procrastinator. So making these Rocky Road Brownies for Father’s Day at the very last minute is right up my alley. These Rocky Road Brownies are ooey gooey decadence.
Now I have a confession to make and I may have shared this with you before but I don’t like brownies. I am more of a cake girl and brownies to me are just dense under baked cake to me. Its not a flavor issue because heaven knows I love chocolate it is a texture issue! I know I have shared with you that everyone else in my family loves brownies so I do make them a lot. These Rocky Road Brownies were a HUGE hit.
The tender marshmallows, crunchy peanuts and smooth creamy fudgy frosting take these brownies over the top. They are like a decadent treat that no one can resist. Ok another confession I LOVED these brownies yes you read right I loved them. Maybe it was the rocky road topping all I know is I wanted to eat the whole batch.
I took a shortcut with this recipe and used a brownie mix but if you prefer to use your favorite brownie recipe please do so. I think the key to the brownies is not to over bake them so be careful.
Another tip is I put the marshmallows in the freezer for about an hour. This helped them to retain their shape and texture when stirring in the warm frosting. It worked great but if you want the marshmallows to melt into the frosting you can certainly skip this step.
To keep marshmallows from melting into the warm frosting pop them into the freezer for about an hour before needed.
Rocky Road Brownies
Rocky Road Brownies
Ingredients
- 1 box favorite brownie mix for 9"x13" pan plus ingredients to make brownies
- 1/4 cup Butter
- 1/4 cup milk
- 3 ounces cream cheese
- 1/2 cup semi sweet chocolate chips
- 2 3/4 cups powdered sugar
- 1 teaspoon vanilla
- 2 cups miniature marshmallows
- 1 cup salted peanuts
Instructions
- Prepare 9"x13" pan with cooking spray set aside.
- Mix brownies according to package directions.Spread mixture into prepared baking pan. Bake 35-40 minutes or until brownies just begin to pull away from sides of pan. (Do not over bake.)
- Combine 1/4 cup butter, 1/4 cup milk, cream cheese and chocolate chips in 2-quart saucepan. Cook over medium heat, stirring occasionally, 6-8 minutes or until melted. Remove from heat. Stir in powdered sugar and vanilla until smooth. Stir in marshmallows and peanuts. Immediately spread over hot brownies. Cool completely. Cut into bars. Store refrigerated.
These Rocky Road Brownies are another perfect treat for a BBQ, picnic and of course Father’s Day. I know my photos are a bit messy but we could not wait to eat them. Guess it just goes to show you that I am not a perfect food blogger and we really do eat what I make. LOL.
