Today is Salad side dish day!LOL or so it seems! I have another delicious and easy salad that is perfect for any BBQ or Pot Luck!! This Italian Pasta Salad is not only easy to make but it is quite tasty!
I love a good pasta salad and I love easy recipes. This one is perfect! It uses less than 10 ingredients and one ingredient has double duty! I headed out to my favorite Smart & Final to do a little shopping for my pasta salad. I love that Smart & Final has early hours and their house brands are amazing! One of my favorite Smart & Final brands is La Romanella. I can find just about anything I need for any Italian recipe in the La Romanella label! Today’s recipe is no exception!
I love that Smart & Final is so community and family focused. They recently announced the launch of its new branding campaign which will place the ampersand (“&”) – already in the 144-year old company’s name – front and center to showcase the company’s relationship with both its customers and the communities it serves.

You can find all of the La Romanella products I used in my pasta salad all in the same aisle at Smart & Final which makes it very convenient and easy especially if your in a time crunch!!
This recipe requires a little chopping but that can all be done while the pasta is cooking so this salad takes just about 20 minuets to prepare!
Once you have chopped all your ingredients you will want to place them in a bowl ready for the addition of the pasta and the dressing.
Once the pasta is cooked make sure to rinse it with cold water this will cool the pasta and remove the starchiness from it. Place the pasta in the bowl with the rest of the ingredients and lightly toss.
This is where the double duty ingredient comes in! I used La Romanella marinated artichoke hearts for this salad and now I love the marinade so I have incorporated it into this salad as the dressing along with some additional vinegar and salt and pepper! How easy is that?
This salad is light and refreshing and great for any time you need to whip up a Pot Luck dish! The La Romanella Marinaded Artichoke Heart marinade is so light and delicious and does not weigh this salad down like so many other dressings can!
Italian Pasta Salad
Ingredients
- 4 cups cooked bow tie pasta
- 1/4 cup sliced black olives
- 1/4 cup diced purple onion
- 1/2 cup chopped pepperoni
- 1/4 cup diced green peppers
- 1/3 cup chopped marinated artichoke hearts
- 2/3 cup marinade from artichoke hearts
- 1/8 cup vinegar
- 1/4 shredded Parmesan cheese
- salt and pepper to taste
Instructions
- Cook pasta according to package directions. While pasta is cooking prepare and chop additional ingredients. Place in bowl. When pasta is cooked rinse with cold water and place in bowl with other ingredients and toss lightly. Add marinade and vinegar and toss to cover the salad. Top with Parmesan cheese. Salt and Pepper to taste.
