Hatch Green Chile Mac and Cheese #15minutesuppers

Do you love Mac and Cheese??  Want to make it in 15 minutes???  Ok do I have a recipe for you Green Chile Mac and Cheese and let me tell you this is amazing!!  This is comfort food with a southwest twist!!  Yumm!!

We ate this up it was gooey and creamy and delicious with a little kick from the chiles and the jalapeno.  The cumin gives it a mild smokey flavor!! I could eat the whole pan it was so good!!  You can use cheddar cheese if you like that better that is the beauty of this you can change a few things up to suit your taste buds!!!

Green Chile Mac and Cheese

Ingredients Method

Ingredients
  

  • 2 T Butter
  • 2 T flour
  • 1 t. minced garlic
  • 1/8 C finely chopped onion
  • 1/2 Jalapeno pepper finely chopped
  • 1 C milk
  • 1/4 C Chopped Hatch Green Chiles
  • 1 t cumin
  • 1/2 t seasoned salt
  • 1/2 t salt
  • 1/2 t pepper
  • 2 Cups shredded Monterey Jack Cheese or more if you like
  • 1/2 C pasta water or hot water
  • 8 oz dry pasta cooked according to package directions.

Method
 

  1. Cook pasta according to package directions as your making the sauce.
  2. In sauce pan melt butter and add chopped onion and saute until transparent 3-5 minuets add garlic and chopped jalapeno pepper add flour and cook flour until it is bubbly. Add in cumin, seasoned salt, salt and pepper. Add milk using a whisk incorporate the milk into the flour mixture. Break up any lumps as the mixture thickens. When thick add shredded cheese and stir until cheese is melted. Add in chopped Hatch Green Chiles and stir until completely incorporated. If sauce becomes too thick you can add about 1/2 c hot water (used pasta water). Drain Pasta and add into sauce. Stir until sauce covers pasta. You can garnish with more cheese or fresh cilantro. Also I tend to under use salt in my recipes so if you need more salt feel free to add it at the dinner table!
