I was Today is Day 5 of “31 Days of Pink” and I was asked to create a special treat for an everyday occasion! So I created my Pink Champagne Cupcake with the new Cool Whip Frosting!
I went over to my local Walmart for a couple of reasons!!
1. I needed to get my nails done.
2. I needed a haircut.
And 3. To check out the NEW Cool Whip Frosting!!

OK back to the every day occasion! As most of you know my MIL comes over for dinner every Sunday night!! So I thought I would make these yummy PINK cupcakes for Sunday’s dinner. So here is how I made them.
Here are your ingredients. The recipe will be at the bottom for you!
I made the cake mix with the ingredients called for on the box with one exception. I made 1 cup of the Champagne Punch and used that in place of the water and I added PINK food color. This gave it a nice mild Champagne flavor and a pretty PINK color. I baked them according to the directions for cupcakes.
I took the Cool Whip Frosting and added PINK gel color and gently folded it into the frosting making sure not to over beat it. It came out a beautiful shade of PINK!
Using a pasty bag and a #10 Star tip I frosted the cooled cupcakes and topped with a PINK sugar pearl!
These are super easy to make and I can’t wait for Sunday so my MIL can enjoy them!!!
Here is your recipe!
Pink Champagne Cupcakes #CoolWhipFrosting
Ingredients
- 1 Box Vanilla Cake mix
- +ingredients to make cake
- If you can't find the Champagne punch base just use water or you can use real Champagne in place of the water called for in the cake mix.
- #CoolWhipFrosting - Cream Cheese flavor
- PINK food color
Instructions
- Make cake according to directions on back of box replacing the water with Champagne Punch or real Champagne.
- Add a few drops of food color to batter and blend until incorporated.
- Fill cupcake papers 1/2 full and bake according to directions on back of box
- Let cool completely before frosting.
- Place #CoolWhipFrosting in a bowl and add PINK food color 1-2 drops depending how bright of a PINK you want. Fold color into frosting until complete mixed in.
- Frost Cupcakes and decorate as desired.
These cupcake will have everyone you know calling you a Baking RockSTAR!!!
