I have had the worst craving for Banana Pudding lately. On my way home from work I stopped at the grocery store to pick the ingredients for my mothers recipe for Banana Pudding but I wanted to put a little spin on her tried and true recipe and came up with Caramel Banana Pudding!!!
Now we all know I LOVE a good shortcut to make my life easier and my mother never made homemade pudding so I use instant and add a teaspoon of vanilla to it to give it that homemade flavor. I used a sugar free option too! Needless to say adding the caramel took this family favorite over the top!! I absolutely loved it and Mr. Pinkcakeplate downed it in about 2 minutes flat!! That tells me he thought it was pretty good too!!
I put these in jars so I could take them to work to eat at lunch time!!! We all love a yummy treat in a jar!! The first layer I put in was the vanilla wafers. I used the mini vanilla wafers but you can use regular vanilla wafers and just break them to fit in the jars for the layer!
The nest layer is the sugar free pudding. I love that the pudding softens the cookies so they are now chewy and yummier!! Is that a word?? Yummier??? Not sure but I like it!!
Then comes the caramel and bananas and more caramel!! More cookies, pudding and then the whipped topping and a caramel drizzle!!
Garnish with fresh bananas and a few more cookies!! Then DIVE in!! Yummier thats what it is!!
Caramel Banana Pudding ~ Recipe
Ingredients
- 1 four serving box vanilla pudding I used a sugar free pudding
- 1 2/3 C. Milk
- 1 t. Vanilla extract
- 1 1/2 Banana sliced
- 1/4 C. caramel ice cream topping
- 24 Mini Vanilla Wafers
- 1 C Whipped topping
Instructions
- Mix pudding according to package directions using 1 2/3 C Milk, add in vanilla. let pudding set up in refrigerator while slicing banana and placing first layer of cookies in serving dishes.
- Layer two heaping tablespoons of pudding cookies and spread to edges. Drizzle about 1 t. Caramel sauce on top of pudding then layer with bananas I used about 4 slices and then drizzled another 1 t. over bananas. Add another layer of cookies and then pudding. Finally add the whipped topping and garnish with a caramel drizzle, bananas and cookies!! Enjoy!!
