I love Mexican food and can usually recreate some delicious meals with a Mexican Flair. O’le! This recipe for Buffalo Ranch Chicken Tacos with Blue Cheese Slaw is out of this world crazy good. Plus it is super easy to make. Because it’s still over 100 degrees here in Arizona I decided to use my slow cooker to cook the chicken! Easy peasy!
Have you ever tried to stand up one of those little taco shells to fill them? It’s kinda tough. I love them they are delicious but I can never get them to stand up so I can pack them with crazy good fillings. Now no buffalo chicken recipe would be complete without the blue cheese element. I was reading in a popular food magazine and there was debate as to what was better for Buffalo Chicken! 47% went with Ranch Dressing while 53% went with Blue Cheese Dressing.

I added just a touch of crumbled blue cheese and sliced scallion for the final touch and let me tell you it makes these crazy good.

Buffalo Ranch Chicken Tacos with Blue Cheese Slaw
Ingredients
Slow Cooker Buffalo Chicken
- 3 lbs boneless skinless chicken breast
- 1 cup Frank’s Buffalo Sauce
- 1 package Hidden Valley Dry Ranch Mix
- 1/2 stick of butter
Blue Cheese Slaw
- 2 Cups Coleslaw Mix
- 1/2 cup Ranch Dressing
- 1/3 -1/2 cup crumbled Blue Cheese set aside about 3- TBSP for garnish
- 5 sliced green onions set aside about 2 TBSP for garnish
- 1/2 teaspoon cracked black pepper
Instructions
- To prepare Blue Cheese Slaw place all ingredients in small mixing bowl, and gently toss until all ingredients are coated with dressing.
- Put the chicken and the buffalo sauce in the crock pot and cook on low for 8 hours.
- Remove the chicken from the crock pot and shred it, using two forks.
- Place shredded chicken back to the crock pot, add the ranch mix and the butter, and stir until the butter is melted and ingredients are well-mixed.
- Serve in Old El Paso Stand 'n Stuff Ranch flavored taco shells topped with Blue Cheese Slaw, crumbles and scallions.
