I love a good salad and I have been trying to eat healthier and a little lighter too. I was so excited when I came across these Eat Smart Gourmet Vegetable Salad Kits. One that really sparked my interest is the Eat Smart Gourmet Vegetable Salad Kit Southwest flavor. I love southwest flavors so this salad kit is right up my alley. I even whipped up a delicious and easy Black Bean and Corn Salsa Verde to add to my salad! I love a good salad.
There are actually five varieties of Eat Smart Gourmet Vegetable Salad Kits
I was able to try all 5 varieties and I loved them all but as I mentioned I love southwest food so the Eat Smart Gourmet Vegetable Salad Kit Southwest flavor was perfect for me!! The Eat Smart Gourmet Vegetable Salad Kit Strawberry Harvest flavor was pretty tasty too. With kale, beet greens, broccoli stalk, carrots and red cabbage, topped with crispy quinoa, almonds, feta cheese and tossed with a light strawberry vinaigrette was so good. This salad would be perfect for a girls brunch or baby shower!
Eat Smart Gourmet Vegetable Salad Kit Southwest flavor kit is influenced by the cuisines of Tex-Mex giving healthy a Southwestern kick with five superfoods. This Southwest salad includes savoy cabbage, red cabbage, radishes, carrots, kale, tortilla strips, corn and cheddar cheese paired with a zesty chipotle ranch dressing.
Now I added a simple grilled chicken breast to my salad to add lean protein. I also created a delicious Black Bean and Corn Salsa Verde to put on top of it all! Like I said I love a good salad. I love using salsa in addition to salad dressing. It keeps calories and fat down with adding so much flavor. I have never added beans and corn to my salsa recipes but it just seemed like a good fit for the Eat Smart Gourmet Vegetable Salad Kit Southwest flavor. You can grill chicken or even lean beef for more protein like I did! Now I don’t feel guilty adding yummy salsa to my salads.
This whole dish just makes me feel healthy all over and the Black Bean and Corn Salsa Verde is so easy to make!
Black Bean and Corn Salsa Verde
Ingredients
- 1 cup 505 Southwestern Hatch Valley Green Chile Salsa
- 1 can Ro Tel tomatoes
- 1 small yellow onion
- 1/2 cup fresh cilantro
- juice of one lime
- 1 Tbs chopped garlic
- 1 tsp salt
- 1/2 cup black beans rinsed
- packet of corn from Eat Smart Gourmet Vegetable Salad Kit
Instructions
- Place first seven ingredients in food processor and pulse until desired consistency is achieved.
- Add in beans and corn stir to incorporate into salsa. (corn will re-hydrate)
- Drizzle on salad. Enjoy
