 almond joy bars 2

We all know the holidays are here and every year we have a baking day! Yes a day full of baking and eating and just plain ol’ fun! Dishes up to our ears and about 50 dozen cookies and candies all to give away! Every year I try to create a new and different cookie or candy to bring to the bake off! These Almond Joy Bars are what I came up with for this years baking day!

These bars are sweet and chewy and soooo good! If you like almond joy candy bars you will love these bars.  Another great thing about these bars is there is no bowl or mess to really clean up other than the pan the bars are baked in!

There is an ingredient in this bar that you would never expect! The middle layer is Pillsbury Crescents® Rolls! That’s right there are Crescents® rolls in these bars! I love that I can find Pillsbury Crescents® Rolls at my local Walmart!

Ingredients Method

Ingredients

  • 31/2 cups sweetened flaked coconut, divided
  • 1 can 14 ounces sweetened condensed milk (NOT evaporated milk)
  • 1 teaspoon almond extract
  • 1 tube 8 ounces refrigerated Crescents® rolls
  • 1 cup chopped almonds
  • 1-1/2 cups semisweet chocolate chips

Method

  1. Preheat the oven to 350F. Line a 13x9-inch baking dish with parchment paper and spray well with nonstick cooking spray.
  2. Sprinkle half of the coconut a 1/2 cup of chopped almonds evenly over the bottom of the prepared baking dish. In the can of sweetened condensed milk add the almond extract and stir until combined. Drizzle half of the mixture over the coconut and almonds in the pan.
  3. Unroll the Crescents® dough. Pinch the perforations together, and lay the dough in the pan. Sprinkle the remaining coconut and almonds on top drizzle with the remaining sweetened condensed milk mixture.
  4. Bake at 350° for 20-25 minutes or until edges begin to brown. Cool completely on a wire rack. In a microwave-safe bowl, melt chips drizzle over top. Refrigerate until firm. Cut into bars. Yield: 4 dozen.

These bars are so good and the chocolate drizzle on top is the perfect touch and it looks pretty!

These sound awesome to make with my Grandkids but why are the crescent rolls put in the middle instead of at the bottom? It seems like that would make the bottom crumbling and messy. Not like that would slow anyone down when eating them but I’m curious. Can’t wait for a warm cookie that tastes like my favorite candy bar!
