Ok I love Tacos, Chili and Enchiladas. This past Saturday I went to the Arizona Taco Festival!! It was so much fun and it totally inspired me to make these amazing Chili Cheese Totchos!
Before I get into these Chili Cheese Totchos let me tell you all about the Taco Festival!
The first thing I want to tell you about is the amazing company that I love and have worked with in the past was a sponsor! Shamrock Farms! Yes my favorite dairy company sponsored the Hot Sauce Tent! It was so much fun!
What a perfect fit too! Because what cools down spicy hot sauce better than ice cold Shamrock Farms milk! I watch a lot of food TV, I have seen commercials where they test different things to see what cools spicy peppers and every time it is ice cold milk! I absolutely love the new packaging on the Shamrock Farms products! It is so fresh and clean and I love the hand lettered look on the Sour Cream packaging!
To me there is nothing better than ice cold Shamrock Farms milk and there was plenty in the Hot Sauce Tent. There was also so.much.hot sauce!
I had such a good time not to mention I ate my share of chips and salsa that I am good for a long time! Ok not really I can never get enough of Mexican food! This love is what inspired my Chili Cheese Totchos!
This recipe is pretty easy and you dont even have to make your own Chili but if you are looking for an easy recipe you can find my Easy Chili Recipe HERE!
List of Ingredients:
- Tater Puffs cooked according to package directions (I used my air fryer that I love!)
- Chili (Your favorite canned or my Easy Chili Recipe)
- Shamrock Farms Sour Cream
- Cheese of course! I used cheddar but you can use your favorite!
- sliced scallions
- chopped cilantro
- chopped tomatoes
- pickled or fresh sliced jalapenos
- your favorite salsa
- and anything else you love to put on top!
Now the real trick to these Totchos is the layering! LOL Start with your Tater puffs then layer with chili, I put a healthy portion of cheese on top and then popped it under my broiler to melt the cheese! Melted cheese is crucial to great Totchos! Once the cheese is melted pile on your toppings, of course I used a HUGE dollop of Shamrock Farms Sour Cream! Then dig in! I don’t know anyone who would turn down a pile of these Chili Cheese Totchos!
Pro Tip: I like to line my cast iron skillets with a layer of aluminum foil for easy clean up!
