Ok, so, Halloween is just around the corner and I have been so busy. I started a new job, hubby has had some health issues that needed to be addressed and our pups are just so needy. But let me tell – you these Baked Halloween Ghostly Donuts are so easy to whip up that I could get them done in less than an hour! You all know I am all about easy and quick.
We have been working at trying to cut our sugar consumption, so I have been using sugar alternatives. I shared my recipe for Pumpkin Spice Sugar Free Creamer a couple of weeks ago. I was perusing the alternative sugars at my local grocery store and there are so many different ones. I was elated when the makers of Monk Fruit In The Raw® reached out to me to try their product.

I loved how easy these cute little donuts were to make. They were moist and had the texture of a traditional fried donut, which I loved. They were pretty tasty and adorable, too. You can even make these donuts at other times of the year if it’s not Halloween – just leave the eyeballs off and have a super cute coconut covered mini donut!! Don’t be afraid to try sugar alternatives. You might be surprised at how they look and taste!
Instead of a mini donut pan I used my mini donut machine. You can find this on Amazon or ocassionally at big box stores. I just love mine.
One tip when using odd shaped baking pans is to use a baking spray with flour in it.What I do is spray the pan with cooking spray and then use flour to coat the pan. This helps to make a “perfect” release from the pan.
Baked Halloween Ghostly Donuts Recipe
Baked Halloween Ghostly Donuts
Ingredients
- Donuts
- ---------------
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon fine sea salt
- 1/3 cup Monk Fruit In The Raw®
- 3/4 cup 2% milk
- 5 tablespoons butter melted
- 2 large eggs
- 1/2 teaspoon vanilla
- ---------------
- Glaze
- ---------------
- 1 cup Monk Fruit In The Raw®
- 1 tablespoon cornstarch
- 3 tablespoons 2% milk
- 1/4 teaspoon vanilla
- 1 cup shredded unsweetened coconut
- 48 googly eye candies or mini chocolate chips
Instructions
- Preheat the oven to 350℉. Lightly spray a mini doughnut pan with cooking spray.
- In a medium pan, whisk together flour, baking powder, cinnamon, salt, and Monk Fruit In The Raw®. In a second medium bowl whisk together milk, butter, eggs, and vanilla. Fold dry ingredients into the butter mixture until smooth.
- Divide the batter between the depressions in the doughnut pan and bake until browned, about 15 minutes. Let cool completely in the pan.
- In a small bowl, whisk together Monk Fruit In The Raw®, cornstarch, milk, and vanilla. Place coconut on a plate. Dip one side of each doughnut in the glaze, then in the coconut. Place googly eyes or chocolate chips on the doughnuts and allow to dry on a rack.
- I used candy eyeballs for my donuts.
