Did Easter sneak up on you like it did me?? Where does the time go? I have no clue but I do know that I have to make something delicious for Easter. I love to make cookies I think they are the perfect little something. They are not a great big cake and they can be made in different sizes. Well I came up with these Peanut Butter Candy Confetti Cookies just for Easter and not only are they pretty but they are so yummy.

Now lets talk about these Peanut Butter Candy Confetti Cookies. I love sprinkles so much, I found these pretty pastel sprinkles at my local Walmart where you can find Eggland’s Best Eggs too. Now what could be prettier and funner than putting these pastel sprinkles in my cookie batter? Yes I did put them in my batter and they look amazing! I used more white sugar than brown sugar in this recipe because I wanted those sprinkles to show in the batter and I think it worked perfectly.
I also made these cookies a bit bigger than my regular cookies. They are about 31/2″ in diameter just the right size to hold 3 Peanut Butter Candies. When I pulled the cookies out of the oven while they were still hot I pressed 3 Peanut Butter Candies on the top of each cookie. Because of the heat the candies stick to the cookies and don’t fall off! Plus there are peanut butter chips in the batter too! Mr. Pinkcakeplate loves peanut butter so I knew he would love these cookies.

Peanut Butter Candy Confetti Cookies
Ingredients
- 1/2 cup softened butter
- 1/2 cup vegetable shortening
- 2 Eggland's Best Eggs
- 2 tsp. vanilla
- 1 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 2 1/2 cups flour
- 1 cup peanut butter chips
- 3 heaping tablespoons sprinkles
- 1 pkg Peanut Butter Candies each cookie needs 3 candies
Instructions
- Heat oven to 375ºF.
- Mix sugars, butter,shortening,vanilla and eggs in large bowl. Stir in flour, baking soda and salt (dough will be stiff). Add in peanut butter chips and sprinkles.
- Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
- Bake 8 to 10 minutes or until light brown (centers will be soft). While cookies are hot carefully press 3 peanut butter candies in the middle of each cookie. Cool slightly; remove from cookie sheet. Cool on wire rack.
