When I got married almost 10 years ago I spent weeks before the wedding making all kinds of sweets! I wanted only desserts and fresh fruit for my wedding reception. I made cookies and mints and these amazing little bites of chocolate covered cheese cake and I put them on lollipop sticks. I was ahead of the times with my chocolate covered cheesecake pops!!
We were on a tight budget I did a lot of DIY for my wedding, this was before everyone was blogging about DIY weddings. I actually baked cheese cakes, a lot of them but I baked them in 9″x 9″ square pans and cut them into one inch squares, one pan made A LOT of cheese cake pops!

How far can you make these in advance, how long could you store?
When I made these for my wedding I made them a month in advance and kept them in the freezer until the day of the event.
Looks very good, these candies are great to make on children’s birthday.
