Slow Cooker Meat Loaf

Ingredients
  

  • 2 lbs ground beef
  • 1/4 cup onion finely chopped
  • 1 eggs
  • 2 Tbs yellow mustard
  • 1/4 cup ketchup
  • 1/2 sleeve saltine crackers finely crushed
  • 1 tsp salt
  • 1 tsp pepper
  • 2 slices pre cooked bacon cut in half

Instructions
 

  • Place all ingredients in a bowl and mix together. Trying not to handle the mixture too much as not to toughen the meat.
  • Place parchment paper in bowl of slow cooker and then place the meat mixture in the slow cooker shaping into an oval loaf. Spread an additional 2Tbs ketchup on top of meat loaf.
  • Place paper towel over the top of the slow cooker then place lid on top of paper towel.
  • Cook on medium high setting for 4 hours.
  • Remove from slow cooker, place bacon slices on top of meatloaf and serve.
