Every Sunday my MIL comes to our home for Sunday dinner! I used to cook a huge family meal. Well now a days I try to keep it as simple as possible, using my slow cooker, or easy pasta dishes, or hot dogs or burgers! I know!! I’m pathetic! LOL! So this week I made one of our favorite meals! Meatloaf, mashed potatoes, crusty bread and a green salad! YUMM! So I thought I would share my Slow Cooker Meat Loaf recipe! It is so easy! Fix it and forget it!
In my opinion meat loaf is not a very pretty dish so I tried to make it as pretty as possible! This meat loaf is moist and delicious!
A couple of things I do is I line my slow cooker with parchment paper. This makes clean up a little easier!
Another tip is to place a paper towel over the top of the slow cooker then place the lid on top. This helps absorb some of the moisture. I think these tips just make the process a little easier!
When the meat loaf is done you just remove it from the slow cooker and serve! I will be honest this meatloaf is not the prettiest meatloaf so I took two precooked slices of bacon to dress it up!!
Slow Cooker Meat Loaf
Ingredients
- 2 lbs ground beef
- 1/4 cup onion finely chopped
- 1 eggs
- 2 Tbs yellow mustard
- 1/4 cup ketchup
- 1/2 sleeve saltine crackers finely crushed
- 1 tsp salt
- 1 tsp pepper
- 2 slices pre cooked bacon cut in half
Instructions
- Place all ingredients in a bowl and mix together. Trying not to handle the mixture too much as not to toughen the meat.
- Place parchment paper in bowl of slow cooker and then place the meat mixture in the slow cooker shaping into an oval loaf. Spread an additional 2Tbs ketchup on top of meat loaf.
- Place paper towel over the top of the slow cooker then place lid on top of paper towel.
- Cook on medium high setting for 4 hours.
- Remove from slow cooker, place bacon slices on top of meatloaf and serve.
