Its starting to be fall around here ok not really it’s still over 100 degrees here. But with the kids heading back to school and Halloween fast approaching its time to start those flavors of fall goodies! Bring on the pumpkin spice! These three ingredient pumpkin cookies are a perfect way to kick off the season!
I love pumpkin chocolate chip cookies and the flavors are perfect together but I wanted to mix it up just a tad! I used white chocolate chips and I love the change! It reminds me of pumpkin bread with a cream cheese frosting! And I love using a cake mix for these cookies. Makes these cookies even easier to make.
This makes about 2 and a half dozen cookies so you can freeze some and have them ready if company stops by unexpectedly or you can just eat them all!!
Three Ingredient Pumpkin Cookies
Ingredients
- 1 15 oz can of pumpkin
- 1 box spice cake mix
- 1 cup white chocolate chips
Instructions
- Preheat oven to 350°
- Line baking sheet with parchment paper
- Mix your pumpkin and cake mix together in a medium bowl until there are no more lumps. Fold in white chocolate chips.
- Use a 2 T cookie scoop and place cookies onto prepared baking sheets, about 2 inches apart.
- Bake for 13-15 minutes, until edges start to golden.
- Remove from oven and allow to cool 5 minutes on your baking sheet. Transfer to wire rack to finish cooling.
