I have to say these Evil Eye Cupcakes have to be the easiest cupcake to make. With the help of some delicious DOVE® Chocolate and Pillsbury® baking mixes you can have these cupcakes whipped up in no time at all.
I love shopping at Target and the DOVE® Milk Chocolate Eye Balls are only available at Target! My favorite Target store is right by my gym so I stop by after my work out at the gym it makes it so easy that they are so close to each other!! I also found my Pillsbury® Perfectly Pumpkin Cake Mix there also.
First you will want to bake your cupcakes you will need your Pillsbury® cake mix and the ingredients to mix the cake. I love to use these nice dark brown cupcake liners I kinda think it makes them look like I bought them from the bakery. There are a couple of tricks to make the cupcakes taste like they did come from a bakery. First I swap out the water called for on the package for milk. To make them extra moist I add in a small package of instant pudding mix even if the mix says it has pudding in it! I also throw in some extra vanilla, an extra teaspoon is great!
For this cupcake I had a hidden surprise in the middle of the cupcake! There is a cheesecake filling in the middle! Yum!!! I also added some nuts and chocolate chips!! It can’t get any better than that!!
Ok here are your directions to decorate the cupcake! I used the delicious DOVE® Milk Chocolate Eyeballs candies as my inspiration!
Supplies:
baked cupcakes
DOVE® Milk Chocolate Eyeballs one for each cupcake
1 container Pillsbury® Cream Cheese Frosting
red frosting
#4 piping tip
pastry bag
off set spatula or butter knife
Take your cupcake and place about 2Tbs of frosting on top of cupcake.
Using your knife or spatula carefully smooth frosting over the top of the cupcake.
Add DOVE® Milk Chocolate Eyeballs in the middle on the top of cupcake.
With the red frosting in pastry bag fitted with #4 piping tip, add red squiggly lines on top of cupcake leading to candy eyeball.
Continue around top of cupcake until lines are all the way around.
There you have your Evil Eye Cupcake!
Here is the cupcake recipe if you want to use it or you can just bake the cupcakes according to the back of the package!
Evil Eye Cupcake
Ingredients
- 1 Box Pillsbury® Perfectly Pumpkin Cake Mix
- 1 cup milk
- 1 small box pumpkin spice pudding mix
- 3 large eggs
- 1/2 cup oil
- 1 t vanilla
- cheesecake filling
- 8 oz cream cheese
- 1/4 cup powdered sugar
- 1/2 cup chopped nuts
- 1/4 cup mini chocolate chips
- 1/4 cup pumpkin spice chips
Instructions
- Prepare cake mix according to package directions, substituting the milk for water and adding the dry pudding mix.
- Line cupcake pans with paper liners. Add 2 Tbs cake batter to each cup. Drop about 1 tsp of cheesecake mixture on top of batter. Then add another 1 Tbs on top of the whole cupcake. Bake in preheated oven for 20-25 minutes or until cupcake springs back when touched. As the cupcake cools it will sink a bit in the center. Just fill that with extra frosting.
