Dollar General has an fantastic selection of both shelf stable products and fresh products!! I was able to purchase cheddar cheese and smoked sausage for my LumberJack Casserole!!
While I prepared my sauce and grilled the sausage I let the dehydrated potatoes soak in boiling water to soften them up just a bit.
I mixed up the sauce and browned the sausage
Then after draining the water from the potatoes it was just a matter of layering the ingrediants in the crock pot!!
This casserole was a huge hit with Mr.Pinkcakeplate who is a “meat and potatoes” kinda guy!! And I loved it because it was gooey with cheese!! YUMMMM!!
Here is the recipe:
Lumberjack Casserole
2 15oz cans Clover Valley Cream of Mushroom Soup
2 Boxes Clover Valley Au gratin Potatoes
2 C Clover Valley Chicken Broth
1 Can Clover Valley Evaporated Milk
1t Seasoned Salt
1t ground black pepper
1T Worstershire Sauce
1t Garlic powder
2 C. grated Clover Valley Cheddar cheese
1 14oz Smoked Sausage sliced
1T Olive Oil
4C boiling water
Place dehydrated potatoes in boiling water while preparing the sauce and browning the sausage.
In a bowl mix together the two seasoning packets from the au gratin potatoes, chicken broth, both cans of soup, evaporated milk, spices and worsteshire sauce. Set aside. In a sauté pan heat the olive oil and brown sausage slices on both sides.
Drain water from potatoes. Place half of potatoes in crock pot and pour ½ of sauce over potatoes. Layer ½ of sausage over potatoes and sauce, sprinkle 1 cup of cheddar cheese over top of sausage. Repeat with remaining ingredients this will be very soupy and loose but will thicken as it cooks. Cook on high for 4-6 hours or on low for 8-10hours. When done you can sprinkle more cheese on top if you want it really cheesy!! Enjoy!
