Are you looking for an easy recipe for Mother’s Day Brunch?  These Cream Cheese Blackberry Pastries are so easy and delicious this is totally your recipe!!

cream cheese blackberry pastries2As most of you know I have been working with puff pastry and today is no exception!  At the brunch I hosted last month this pastry recipe was the most asked for recipe so when I was given a Brunch theme for this months 12 Bloggers theme I knew this had to be the recipe!  The tender flaky pastry layers combined with sweetened cream cheese and blackberry jam with a light glaze is simply delicious!  You can actually use any flavor of jam you would like.  Or how about a Nutella version?  Hmmm I might have to work on that one!!

Ingredients

  • 1 pkg. (2 sheets) Puff Pastry, thawed
  • 8 oz. cream cheese, softened
  • 3 Tablespoons powdered sugar
  • 1 tsp. vanilla extract
  • 1/3 c. seedless blackberry jam
  • GLAZE:
  • 1 c. powdered sugar
  • 2 Tbsp. milk
  • 1/2 tsp. vanilla extract

Instructions

Preheat oven to 400 degrees.

Unfold and lay out thawed Puff Pastry sheets on lightly floured baking sheets.

Cut each sheet into 12 equal parts by cutting into thirds, in half, then in quarters; set aside.

In a mixing bowl mix cream cheese, sugar, and vanilla. Mix until smooth.

Score each rectangle 1/2 inch from the edge. Careful not to cut all the way through.

Spread one heaping Tablespoon of cream cheese filling on each puff pastry piece.

Spread one heaping teaspoon of jam on top of cream cheese on each puff pastry piece.

Bake for 15-17 minutes, or until lightly browned.

Meanwhile, make glaze by whisking powdered sugar, milk until smooth.

Remove baked pastries from oven and allow to cool for 10-15 minutes.

Lightly drizzle glaze on each pastry.

Serve & enjoy!
