I so apologize again I have been under the weather again. It has been crazy. Hopefully all this sickness is behind me! But while I was off being sick we bought a travel trailer!! Yes we did! So with that in mind I decided I wanted to do a series on NO BAKE cookies and a few NO BAKE bars. Why you ask? Well because not only are these no bake but I can make them in my electric skillet which will be my go to appliance in the travel trailer! Yes the trailer has a stove and an oven but they both use propane and I am a little intimidated with propane and it also heats up the small space of the trailer. The electric skillet does not. Now this recipe for Brown Sugar No Bake Cookies is written for the stove top but know you can use an electric skillet to make all these NO BAKE cookies and bars.
I wanted to tweak the age old chocolate no bake cookie recipe and my Sweet Marie Bar recipe. These Brown Sugar No Bake Cookies are just the way to start switching it up! If you love brown sugar and pecans this recipe is for you. If your not a fan of pecans go ahead and add your favorite nut. I think if you used salted peanuts they would taste almost like a honey roasted peanut with a salty sweet flavor goin’ on. LOL. These little cookies are crisp on the outside and soft and creamy on the inside. The oats and pecans give this little cookie a nice chew and crunch. The brown sugar shines through with the help of the butter this cookie is just so good. Pour yourself a tall glass of ice cold milk, sit down and enjoy one or two of these little gems.

Brown Sugar No Bake Cookies
Ingredients
- 2 c brown sugar light
- 1 stick butter
- 1/2 c milk
- 3/4 c chopped nuts
- 3 c quick cooking oats
- 1 tsp vanilla extract
Instructions
- In saucepan, combine the butter,sugar & milk. Bring the mixture to a boil & boil for 5 minutes. Remove from the heat & add remaining ingredients. Allow mixture to cool for about 5 minutes. Drop from a spoon onto wax paper. makes 3 dozen.
