Do you need a super easy treat to take to the last minute Labor Day BBQ? These Brown Butter Chocolate Chip Cookies are a breeze to put together!! Using just a few things you probably already have on hand!
What you will need is a yellow cake mix, a cube of butter, 2 maple and brown sugar instant oatmeal packs, eggs and chocolate chips!
I know the oatmeal is an unusual ingredient but let me tell you it adds flavor and texture to these cookies!! I promise you don’t want to leave these out!!
Have you ever browned butter? It is amazing in baked goods like these cookies. Browning the butter brings out a yummy nutty flavor. When you are browning the butter do not step away. Butter will burn very quickly so you want to watch it very carefully and just when it starts to turn that beautiful golden brown color remove it from the heat and keep whisking the butter until it cools. This will keep it from burning. This is another step you do not want to skip.
Then when you have incorporated all the ingredients gently add in the chocolate chips and fold them gently. Do not over work this dough it will make the cookies tough and who likes a tough chocolate chip cookie?
I highly recommend using a medium cookie scoop to scoop out the cookies! I am a huge believer in cookie scoops for a lot of things. They help to keep portions uniform which helps with those pretty cookies that are all the same size and nice and round!
Brown Butter Chocolate Chip Cookies
Ingredients
- 1 stick salted butter
- 1 box Duncan Hines yellow cake mix
- 2 packs of Quaker Maple & Brown Sugar instant oatmeal
- 2 eggs
- 2 cups chocolate chips
Instructions
- Preheat oven to 350 degrees. Line cookie sheet with parchment paper. Using a saucepan on low-medium heat add butter stirring until a golden brown...whisk consistently even after the butter has melted. Pour melted butter into a mixing bowl. add the cake mix, oatmeal, and eggs, beat on low speed only until all ingredients are combined, gently fold in the chocolate chips until incorporated into dough. Scoop the dough using a medium sized ice cream scoop onto the prepared cookie sheet. Bake at 350 for 10 minutes or until the edges of the cookies begin to turn brown. Remove from the cookie sheets and let cool completely on a wire cooling rack.
