I was asked to share a recipe using ingrediants found at Smart & Final. I was able to find all my ingredients there with the exception of the few spices I already had on hand! So I would love to share one of my favorite recipes with easy follow along pictures!!
I love chicken and an easy chicken dish is always at the top of my list!! My husband loves chicken too so this recipe is a favorite at our house!! I have been making this dish for about oh 20 years and learned it when I was working as a nanny. Yes it was a lifetime ago!!!!LOL!
So are you ready to see just how easy this dish is? I add onions to mine because we love onions in our house but you could definitely leave them out.
Here is the Recipe with step by step photos:
Easy Chicken Marsala
4 chicken breast halves I purchased Foster Farms Chicken Breasts, Bone-In, Family Pack, @ $ .99 PER LB. At Smart & Final
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 large clove garlic minced or 2t minced garlic
4 tablespoons olive oil
4 cups fresh mushrooms, sliced
1 large onion sliced
1 1/2 Marsala wine (Pompeian Marsala wine found at Smart & Final)
Combine flour, salt, pepper; mix well. Heat oil in a heavy non-stick skillet over medium high heat. I like to use my electric skillet for this makes it even easier!!
Dredge chicken in seasoned flour mixture.
Cook chicken until lightly browned on first side, about 2 to 3 minutes. Turn chicken over and brown. These chicken breast were huge so I only cooked 3.
Slice and place mushrooms on top of browned chicken.
Do the same with the onions. and sprinkle garlic over top. You can add more salt and pepper at this point if you would like.
Pour 1/2 bottle of cooking wine over top of chicken, mushrooms and onions.
Cover and let simmer 30 to 35 mins. If you use chicken without bones decrease the cooking time to 20 to 25 mins.
When chicken was cooked through I took all the mushrooms, onions and chicken out of the pan, added the remaining Marsala and deglazed the pan working to get all the yummy bits from the bottom of the pan incorporated in the liquid. The sauce thickens as your stirring and makes a beautiful brown glaze. I then added the veggies and chicken back into the pan and bathed them in the sauce.
You cant see the chicken through the mushrooms and onions but it is there!!! I promise!!
Yummm wish you could all come over for dinner!!! This is fantastic!!!
