I received the most adorable Cookie Exchange kit from DownEast Basics and I love it! Each kit contains enough for 12, complete with invites, recipe cards and cookie id cards! Plus, there are treat bags, complete with tags and ribbon! And, cute stickers if you want to have a little friendly competition! You can see details, or buy your own right here. I made these cookies last night as a test, and I have to say the next cookie exchange I go to I am bringing these!!
Paula Deen Chocolate Meriange Kisses!!! They are yummy crisp on the ouside and chewy on the inside!! I love the nuts in them!!
Here is the recipe! I used my Kitchen Aid to whip the egg whites and then carefully folded in the other ingredients.It is a little labor intensive but easy!
Chocolate Meringue Kisses
Ingredients
- 1 cup confectioners’ sugar
- 3 egg whites, stiffly beaten
- 1/2 cup crushed saltine crackers
- 1/2 cup walnuts or pecans, chopped
- 1 teaspoon vanilla extract
- 1 (6-ounce) package semisweet chocolate chips
Directions
Preheat oven to 325 degrees F.
Beat egg whites with mixer until stiff. Using a large bowl, fold the confectioners’ sugar a little at a time into the stiffly beaten egg whites. Add the crackers, nuts, and vanilla, and fold in gently. Melt the chocolate over a double boiler and allow to cool slightly. (I melted mine in the microwave) Fold the melted chocolate into the egg white mixture. Using a greased cookie sheet, drop the mixture by rounded half teaspoonfuls. Place in the oven and bake for 12 minutes. Remove cookies from oven and repeat until batter has been used up.
