I bring treats to work all the time. All my baked goods to be exact!! I have one coworker who is a Vegan and doesn’t get a chance to eat any of my goodies!! So I thought I would make a Vegan-friendly treat to bring to work!! A Vegan Chocolate Wacky Cake to be exact!!
I came across a recipe for something called a “Wacky Cake” I remember this recipe!!! I used to make these in Jr. High and High School for my family!! My mother taught me how to make this cake that use no eggs or dairy!! We usually made this cake when we were out of eggs!!
These cakes are moist and delicious!! I frosted it with a frosting creation that still needs tweaking and when I have that recipe perfected I will share it with you!! I drizzled it with melted peanut butter and sprinkled it with mini semi-sweet chocolate chips!! Let me tell you everyone enjoyed this cake!! So if you have no eggs in the house this is the easiest cake to make and it is so yummy you can just sprinkle it with powdered sugar and it is good to go!!
Vegan Chocolate Wacky Cake
Ingredients
- 3 cups flour
- 2 cups sugar
- pinch salt
- 2 teaspoons baking soda
- 10 level tablespoons unsweetened cocoa
- 2 teaspoons vanilla
- 3/4 cup salad oil
- 2 tablespoons vinegar
- 2 cups cold water
Instructions
- Sift dry ingredients into a large mixing bowl. Add remaining ingredients and mix with a large spoon until smooth. Spoon into a greased and floured 13x9x2-inch baking pan. Bake at 350° for 30 minutes. Frost with your favorite frosting.
