I love everything about this casserole! It starts with a kiddo favorite and kicks it up to a spicy cheesy dish!! But not too spicy because even your kids will like this one!!! Your gonna love this Tex Mex Pasta Skillet!! One recipe you will make again and again!
This yummy casserole starts with two blue boxes of Mac and Cheese!! You know the kind! Yup that’s the one, the one we all loved as kids and begged our moms to make!! Ahhh the blue and yellow box!! Even today kids love that stuff!! Mr. Pinkcakeplate love this so much he almost ate the whole skillet!!
This recipe is not really that hard to make but it does take 2 pans to cook!! You prepare the mac and cheese according to the package directions while you brown your ground beef in the skillet! I know I hate having to use 2 pans to prepare anything but this one is sooooo worth it to make!!
Between the spicy taco seasoning, the salsa and the tangy melted cheddar cheese these flavors are a fiesta in your mouth!! But not too spicy and if your worried about it being too spicy for your kiddos you can substitute with 1 cup of diced canned tomatoes or a really mild salsa.
You can choose your toppings too! We love sour cream and fresh chopped tomatoes, I especially love sliced green onions and cilantro! Gives it a fresh pop of flavor!! I’m learning its all about layering flavors!!!
Tex Mex Pasta Skillet
Ingredients
- 2 packages 7-1/4 ounces each macaroni and cheese dinner mix plus ingredients to make macaroni and cheese
- 1 pound ground beef
- 1 pkg Taco Seasoning
- 1 cup chunky salsa
- 2 cups 8 ounces shredded Mexican cheese blend
- Sour cream chopped tomatoes,and sliced green onions for garnish, optional
Instructions
- Prepare macaroni and cheese according to package directions. Meanwhile, in cast iron skillet, cook beef until no longer pink; drain. Stir in salsa and taco seasoning; remove from skillet and set aside. Wipe out skillet and spay with cooking spray. Spread macaroni into the prepared cast iron skillet. Layer with beef mixture, sprinkle with cheese.
- Bake, uncovered, at 350° for 15-20 minutes or until heated through. Serve with sour cream, chopped tomatoes, and onions if desired. Yield: 8 servings.
