OK I have heated up my oven again and started doing a bit of baking. I love cookies big soft chewy cookies. Finding delicious and different cookie flavors has been fun and these Strawberry Cheesecake Cookies are certainly a delicious option. I think they are just the essence of summer.
I love taking just about any shortcut I can when it comes to cooking and baking and these Strawberry Cheesecake Cookies are no exception. Starting with a store bought muffin mix and adding a few other ingredients these cookies can be mixed up in a jiff. Muffin mixes can be found in several flavors and varieties and they are inexpensive. I always have some of these muffin mixes in my pantry.
I love a soft chewy cookie and these cookies bake up soft and chewy and stay that way. The chocolaty drizzle on top makes them so pretty and adds a bit of a sweetness to the cookies. They are so pretty even without the drizzle.
I could eat this whole batch of Strawberry Cheesecake Cookies they are just so good. They are perfect for that summer BBQ or picnic. I like them because they dont make a huge batch of cookies but, if you need a lot of cookies you could easily double the recipe. These Strawberry Cheesecake Cookies would be perfect to whip up with your kiddos. It is summer vacation and what better activity to have with your kids that whipping up a batch of soft and chewy Strawberry Cheesecake Cookies. I think I am off to make double chocolate chip cookies using another muffin mix flavor!

Strawberry Cheesecake Cookies
Ingredients
- 2 7 oz pkg Strawberry Cheesecake Muffin Mix I used Martha White
- 1/4 cup butter softened
- 1/4 cup vegetable shortening
- 1 teaspoon vanilla extract
- 1 pkg instant cheesecake pudding mix dry
- 2 eggs
- 4 oz white candy melts
Instructions
- Preheat oven to 350 degrees.
- Mix all ingredients in medium bowl until blended. Drop by tablespoon onto parchment covered baking sheet or greased cookie sheet. Bake in preheated oven for 12-14 minutes. Allow to cool for about 3 minutes on cookie sheet then remove cookies and allow to cool completely. While cookies are cooling melt candy melts in the microwave until completely melted. When cookies are cool drizzle with melted candy.
- Makes approximately 2 dozen cookies.
