I love to bake I kinda think it is my super power! LOL I also love to use ingredients that are easily found and are in my pantry. I hate having to hunt down a special ingredient! These Sour Cream Banana Snack Cake falls right into that category! With the exception of the over ripe bananas I have everything I need all in my pantry or fridge pretty much all the time!

This cake is moist delicious and just a teeny bit healthy!! I say that jokingly but hey it is chock full of bananas and yummy creamy Shamrock Farms Sour Cream! It is so good and what kid would not love coming home from school to find this waiting for them? I know a perfect after school snack! am I wrong? I am telling you it is so good I ate it for breakfast!
Honestly I really love adding Shamrock Farms Sour Cream to my baked goods it adds so much to a recipe. It is just one of those high quality ingredients that are so easy to incorporate into a recipe. Not only does sour cream add moisture but it also acts as a leavening agent and in my opinion helps balance flavor and keep baked treats like this cake from being too sweet! I love that Shamrock Farms Sour Cream comes in traditional, light and organic varieties.
Now this cake would be just fine without any frosting but you know me I had to put a generous layer of frosting on top AND sprinkle it with chopped walnuts!
The frosting is super easy and it just finishes this cake. If your looking for an easy after school treat or just an every day treat this Sour Cream Banana Snack Cake it perfect!
Sour Cream Banana Snack Cake
Ingredients
- Banana Bars
- 1 ½ cups sugar
- 1 cup sour cream
- ½ cup butter softened
- 2 eggs
- 1 1/2 cups mashed bananas about 3 large
- 2 teaspoons vanilla I love Mexican vanilla
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- Fluffy Cream Cheese Frosting
- 1 16 Oz. Container of Whipped Topping Cool Whip
- 1 8 oz. Packages of full fat/regular Cream Cheese room Temperature
- 1 Cup Powdered sugar
- 2 Tsp Vanilla
- 1/2 cup chopped walnuts this is optional
Instructions
- Heat oven to 350 degrees. Prepare a 10x15 jelly roll pan with either a cooking spray or grease and flour the pan(I use bakeing spray that has four in it.I am all about easy!)
- In a medium size bowl blend together the sugar, sour cream, butter and eggs. Mix on low speed, scraping bowl occasionally, until combined. Add bananas and vanilla and mix on low speed for about 30 seconds.
- Add flour, salt and baking soda and mix on medium speed just until combined (about 1 minute). Pour into prepared pan and bake 18 to 22 minutes or until golden brown and a toothpick inserted in the middle comes out clean. Cool completely then frost with Fluffy Cream Cheese Frosting. Sprinkle with chopped walnuts. Enjoy!
- Fluffy Cream Cheese Frosting
- Place room temperature cream cheese in a bowl add in vanilla, slowly mix in the powdered sugar one cup at a time. Scrap the sides and combine well. Add Whipped topping half of container at a time and gently fold into cream cheese and sugar mixture. Mix until all the whipped topping is incorporated. Do not over mix, the frosting will loose its Fluffiness if over mixed.
