We are a casserole family. I guess its because we are a product of moms going back into the work place and so easy and quick meals were all the rage of the day. My mom was a single mom for a number of years so it was just easier to have a casserole for dinner. Kind of a one pan meal. I have always baked my Tatertot Casserole but I was thinking that I bet I could put this in the slow cooker. I gave it a shot and it worked so well I wanted to share my Slow Cooker Tatertot Casserole recipe with you today!
Putting this comfort food casserole in the crock pot made my life so much easier! Typically I put the Tatertots on the top of the meat mixture but Mr.Pinkcakeplate convinced me to try putting them on the bottom, so the potatoes went on the bottom of my slow cooker. Make sure you use cooking spray on you slow cooker liner so the potatoes dont stick!
I browned the ground beef with 1/2 cup of finley chopped onion and when the beef was cooked in went the cream of mushroom soup and milk.
This went over the top of the potatoes.
Then of course plenty of sharp cheddar cheese went on top of the whole shebang!
After cooking this casserole came out fantastick. The tatertots on the bottom had a nice crust to them and were perfect. Because all the components of this casserole are already cooked it is simply a matter of heating everything through and getting the cheese all melty!
Serve with a nice salad and bread and you have a nice comfort meal!
