Here I am again late to the game. I was invited to a BBQ for the 4th of July and of course I have to bring something. I whipped up these Red, White & Blue Funfetti Shortbread Bites in no time at all. They are easy to make and transport easily to any gathering.
I love shortbread. There is just something about a shortbread cookie. They are crisp, flaky and have an amazing buttery flavor. Another reason I love shortbread is because I usually have all the ingredients in my fridge and pantry. I always have butter in my fridge ALWAYS! This is one of my “go to” recipes too. I love it because it whips together so quickly. Even if I pull my butter out of the fridge I pop it into the microwave for about 20 seconds and it is soft and ready to use in this recipe.
Now one thing you do need to keep in mind is that the dough needs to be chilled for at least 2 hour if not more. I usually make this easy to pull together batter first thing in the morning, do my other tasks and by the time I am done with all that, the cookies are ready to pop in the oven. Another reason I love this recipe is that you only have one bake. That’s right ALL the cookies bake at the same time, so no having to shape and bake 4 batches of cookies. That is perfect for this Arizona Grandma, we have been having triple digit weather for a couple of weeks now.
Because it is the 4th of July I used the red, white & blue sprinkles, because why not? But if you have another celebration just change the color of the sprinkles and you can even change the color of the almond bark. I love using Wilton Candy Melts which come in a variety of amazing colors. If you can’t find Wilton Candy Melts in your local store you can always find them on Amazon. Here are a few of my favorite colors.
Another thing I absolutely love to use are these Wilton Disposable 16 Inch Decorating Bags I use them to melt my candy melts in then just snip the tip off and its ready to decorate these shortbread bites! But what I really like about them is if I am done with them I toss them in the trash but if not I let the candy harden and use them at a later time.
Here is your super easy recipe for these fun Red, White & Blue Funfetti Shortbread bites!
Red, White & Blue Funfetti Bites
Ingredients
- 1 cup butter softened (do not use margarine)
- 1/2 cup powdered sugar
- 2 cups all-purpose flour
- 1 Teaspoon vanilla
- 1/2 Teaspoon almond extract
- 3 heaping Tablespoons Red White & Blue sprinkles for batter
- 3 oz Red Wilton Candy Melts melted
- additional sprinkles for top of cookies
Instructions
- In large bowl, beat butter,powdered sugar and flour with electric mixer on medium speed until fluffy add in vanilla and almond extract. On low speed, fold in 2 T sprinkles.
- Place plastic wrap on counter and place dough in the middle shape into an 8"x8"x3/4" square and wrap tightly with wrap. Place in refrigerator for at least 2 hours or overnight. Remove from refrigerator and place on cookie sheet. Heat oven to 325°F. On cookie sheet, cut dough into 8 rows by 8 rows, making 64 squares. With knife, separate rows by 1/4 inch. Bake 28 to 35 minutes or until set and edges are just starting to turn golden. Do not remove cookies from cookie sheet. Cool completely, about 30 minutes.Meanwhile, in small resealable food-storage plastic bag, place melted candy melts. Seal bag; cut tiny hole in corner of bag. Pipe candy coating over cookies. Before candy coating sets, sprinkle colored sprinkles over cookies. Let melted candy coating set and enjoy!!
