OK OK its finally pumpkin season and I have been waiting all year long to tweak an old soup recipe into this amazing Pumpkin Sausage Stroganoff. That’s right I took one of my favorite soups and turned it into the most delicious pasta dish. This is one dish your whole family will love! Adults will love it because its just plain good and kids will love it because of the fun bow tie pasta.
This Pumpkin Sausage Stroganoff is so good and I love the addition of pumpkin. I use spicy Italian sausage and add crushed red pepper to give this hearty pasta dish a kick. Now if you and your family don’t like heat just omit the crushed red pepper and go with a mild Italian sausage. I used rustic DaVinci Bow Ties also known as Farfalle. DaVinci pasta is made in Italy with the finest ingredients, making it the perfect canvas for any pasta dish. It was the perfect choice for the Pumpkin Sausage Stroganoff. The sauce coated the cute bow ties with all its creaminess.
When I started cooking the onions and mushrooms my house smelled so good! I think if you just cook an onion in some olive oil it will make any house smell delicious! I remember watching a daily home show and the host stated if your running late and your husband comes home and wonders where dinner is quickly start cooking an onion and he will never know you have no clue whats for dinner! I loved that comment and still chuckle when I think about it because its basically true! And it gives you time to figure out what to prepare, I love that.
This pasta dish is creamy and full of flavor and even though pumpkin is a fairly mild flavor the spin it puts on this Stroganoff is amazing. If you like pumpkin you will not want to miss out on making this dish. As I mentioned before this stroganoff has a wonderful kick to it and I love the combination of the cool creamy sour cream with that spicy sausage and crushed red pepper. The addition of cream helps to keep the heat down.

Pumpkin Sausage Stroganoff
Ingredients
- 16 ounces hot Italian style sausage
- 1/2 cup onions minced
- 1 clove garlic minced
- 1 t. Red Pepper Flakes
- 1 tablespoon Italian seasoning
- 1 t season salt
- 1 t black pepper
- 1 cup fresh mushrooms sliced
- 3/4 cup pumpkin canned
- 1 cup low sodium chicken broth
- 1/2 cup heavy cream
- 1/2 cup sour cream
- 1/2 cup water
- Davinci Bow Tie Pasta
Instructions
- Over medium heat brown the sausage breaking into small bits. Drain fat. Add the onion, garlic, Italian seasoning and mushrooms and sauté until vegetables are cooked.
- Add the canned pumpkin and the broth, stirring to mix well. Cook at a low simmer for 20-30 minutes.
- While the Stroganoff is simmering prepare the pasta according to package directions.
- Remove from heat and stir in heavy cream, sour cream and water.
- Serve over Davinci Bow Tie pasta, garnish with sliced scallions.
This Pumpkin Sausage Stroganoff is so easy to whip up I had it from start to finish in about 30-45 minuets. The longer you let the sauce simmer the better the flavor. So even though the recipe says to simmer for 30 minutes you can easily let it simmer longer. I also think you could throw this in the rock pot to let it simmer all day before adding the cream and sour cream. I mean seriously the flavor would only get better!
