I love to watch food and recipe programs on TV. My favorite channels are the Food Network and the Cooking channel. I find so much inspiration from the shows on these two channels. I have one show that I cannot wait for the new season to start, it revolves around crazy Fair and Carnival foods. Some foods on this show I would never in a million years even attempt to recreate or even eat for that matter. But there was this one carnival food that was featured on this show reminded me of my childhood. Spaghetti and Meatball Pizza Pie. I had to do it, I had to make these mini because lets face it who doesn’t love their own Mini Spaghetti and Meatball Pizza Pies?
As usual I love taking shortcuts anywhere I can. That is why I love using Rhodes Frozen Bread Dough. Plus a few other easy ingredients these pizza pies whip up in no time at all.
I planned ahead for this recipe and put one loaf of frozen bread dough in a zip lock bag and let it thaw in the refrigerator over night. The dough was still cold but it was perfect for making these mini Spaghetti Pizza Pies. Cutting the loaf of bread dough into 4 even portions was perfect for working with and it let the dough thaw just a bit more.
I rolled each piece of dough the size of my salad plates which are 6 inches. Perfect mini size pizzas!
I like to par bake the dough so it does not get soggy from the topping. They were baked in a 350 degree oven for about 5-7 minuets. While the dough is par baking, cook the spaghetti according to package directions. I used angel hair pasta but you can use regular spaghetti if you like. Drain pasta and add sauce to the pasta to coat liberally.
Cut the meatballs in half. 2 meatballs per mini pizza. Remove the pizza crusts from the oven and top with the spaghetti and spread out, leaving about a 1/2 inch crust around the pizzas.
Place meatballs cut side down on pizza. 4 meatball halves per pizza.
Then pile on the cheese. Bake 15 minuets in 350 degree oven. Eat and enjoy.
Just think how your kids will love this carnival inspired meal.
Look at all that goodness packed in a individual sized pizza!
