Well if you haven’t noticed I have been on a bit of a hiatus. This stupid flue hit our home pretty bad and then we both got secondary infections so let me tell you I kinda feel like our home was a hospital. LOL! Well I am back on the up and up and feeling good again finally! One thing I did make before out house was inflicted with all the flu bug stuff, is this Melted Ice Cream Quick bread.
Yes you read that right! Melted Ice Cream was used in this recipe! Think about it ice cream is full of great ingredients to work with. Cream, sugar, eggs to start with. The rest of the ingredients are most likely already in your pantry! This bread is easy to make and it would be perfect to put in a welcome basket to take over to your new neighbors!
This Melted Ice Cream Quick Bread is not overly sweet even with the addition of extra chocolate chips. The glaze over the top of the bread adds just the right amount of sweetness and I love that it is so easy to make. I served this bread with a delicious cup of tea but I bet it would be amazing with hot chocolate. Easter is just around the corner and this Melted Ice Cream Quick Bread would be a perfect addition to your Easter table.
The Melted Ice Cream Quick Bread did not last very long in our house. Between Mr. Pinkcakeplate and myself we had one little loaf gone in about 30 minutes flat. It was warm out of the oven and we slathered it with butter! Soooooo delicious. If your looking for an easy and delicious bread this recipe is the one for you. Just think of the endless flavor options. I think I want to try Pralines and Cream with a caramel glaze wouldn’t that be another amazing quick bread?
Melted Ice Cream Quick Bread
Ingredients
- 3½ Cups Melted Ice Cream I like to microwave mine for 1 minute intervals until soft and melted
- 2 Cups Flour
- 2 Teaspoons baking powder
- 1 Teaspoon salt
Glaze
- 1 Cup Powdered Sugar
- 2 Tbsp milk
- 1 Teaspoon Vanilla Extact
Instructions
- Preheat oven to 350 degrees F.
- Grease a loaf pan with non stick cooking spray.
- In a large mixing bowl, combine melted ice cream,flour, baking powder and salt. Batter will be thick.
- Spread into loaf pan. ( I made 3 mini loaves and baked for 35 minuted)Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool completely
Glaze
- Mix powdered sugar, vanilla and milk in small bowl until smooth. Drizzle over top of loaves and let sit until glaze is set.
- Slice and enjoy.
