Well it’s finally September and summer is pretty much over but do you have any Zucchini that are still hanging around in your garden?? I have a great recipe that will help take care of that end of the season zucchini!! How about a great recipe for Stuffed Zucchini?? Its cheesy and stuffed with onions and mushrooms sooooo good!!
With just a few ingredients you most likely have in your pantry and some fresh ingredients you will have this whipped up in no time!!
This recipe looks so fancy it will impress your family and friends!! The hardest part is scooping out the zucchini to create the shell to stuff!
I could eat these at every meal they are soooo tasty!
Ingredients
Method
- In a large pan heat the Olive Oil over medium high heat.
- Add the Mushrooms and let cook until browned and reduced by about a 1/3.
- Add the Onions and cook until soft and translucent.
- Add the Garlic, Salt, Pepper, Italian seasoning and Dijon Mustard and let cook an additional 2 minutes.
- Remove from heat and add the Vinegar, Bread Crumbs and Romano cheese, stir to combine.
- Preheat oven to 350˚.
- Spoon mixture into Zucchini halves. Top with an additional sprinkle of bread crumbs and cheese if desired.
- Bake at 350˚ for 8 minutes. Then broil an additional 2-3 minutes until the tops are browned and the additional cheese, if added, is melted.
- Serve hot.
So now go out and gather up that end of season zucchini and stuff it with delicious mushrooms and cheese!! You can’t go wrong with cheese on anything!!!
