I love a good cold pasta salad. How about you? There are so many different recipes for pasta salads that is seems like they have all been done. I’m not saying my Greek Pasta Salad is a one of a kind but this Creamy Greek Pasta Salad is a new taste for me. And I love it.
I really wanted a light fresh taste and I wanted to incorporate some new veggies into this salad. I was really pleased when the good people at Reese asked me to use Hearts Of Palm in a recipe. Have you ever had Hears of Palm? I have to be honest I have not BUT I love them. They remind me of artichoke hearts which I love too. I was raised in California where artichokes were a regular item on our dinner table. I always loved eating the artichoke leaves but not until I got older did I appreciate artichoke hearts. Especially marinated artichoke hearts. In this recipe I use Reese Marinated Artichoke hearts and the marinade is used in the creamy dressing.
Not because I wanted to cut calories but because I wanted a creamy dressing on this cold Greek pasta salad I used Greek yogurt as one of the dressing ingredient. It totally worked in this salad.
Now lets talk about hearts of palm. The heart of palm is the delicious, crunchy vegetable harvested from the center of the cabbage palm tree. Though they resemble white asparagus, the flavor is much more delicate, making them extremely versatile. I love them in this salad they add a nice crunch to it and take on the flavor of the dressing which is cool and tangy. Hearts of Palm are rich in potassium, contain vitamin c and are a low cholesterol food. All good for your HEART!
This Greek Pasta Salad is a great addition to any BBQ, Party menu or Picnic. Go ahead and add in other veggies or cheeses in this. I love being able to customize your pasta salad.
GREEK PASTA SALAD RECIPE
Greek Pasta Salad
Ingredients
- 1 lb pasta such as cavapatti or penne cooked according to package directions
- 3/4 cup plain Greek yogurt
- 1/3 cup mayonnaise
- 2 tablespoons lemon juice
- 1 clove garlic minced
- 1 cup roughly chopped Reese marinated artichoke hearts (drained save for dressing)
- 1 cup Reese Hearts of Palm roughly chopped
- 1/4 cup red onion finely diced
- 1/4 cup Feta Cheese crumbled
- 1/2 cup sliced black olives
- 1/2 cup grape tomatoes
- 1/4 chopped Flat Leaf Parsley
- Kosher salt and freshly ground black pepper to taste
Instructions
- Cook the pasta according to package directions.
- While the pasta is cooking, combine the Greek yogurt, mayonnaise, lemon juice, garlic, artichoke marinade in a small bowl and set aside.
- Drain the pasta and run cold water over it. Place the pasta in the large bowl, add olives, hearts of palm, artichoke hearts,onion and tomatoes and stir until combined. Add dressing and toss until everything is coated. Add in chopped flat leaf parsley and stir again. Season with salt and black pepper,add feta cheese on top of salad.Serve and enjoy.
- Store covered in the refrigerator for up to 2 days.
