I shared a picture of these easy Whoopie Pies on Instagram a few weeks ago and I thought I had better share the recipe with you! I love Whoopie Pies and these could not be easier because I took quite a few short cuts!
Did you noticed I said these were EASY? First off I uses a brownie mix and premade frosting that even came in it’s own piping bag with a star tip! Now how is that for taking short cuts? Well kind of. It actually took me three tries to get the “cookie” part to work right! I hate having to remake a recipe and the first two were so bad I had to throw them away. I hate wasting food! Really I do.
I made these around the 4th of July so I used the red, white and blue sprinkles but you can actually use what ever colors you want or even leave them off! I think chopped nuts or even mini chocolate chips instead of sprinkles would be awesome! I might just have to try that! Chopped almonds, yes that is what I would do next.
Things You Need for Easy Whoopie Pies:
- Brownie Mix
- Chocolate Frosting
- Sprinkles
- Cookie Scoop
- Baking Sheet
- Parchment Paper
I mentioned on Instagram that these were so good my son ate 3 of these! That still left quite a few to eat so I took them up to scout camp to share with Mr. Pinkcakeplate’s Trading Post Staff. I didn’t tell you he was up in Flagstaff for 6 weeks, yup I was home with son and dogs. It was kinda nice not having to worry about anyone but myself. I dont think I cooked dinner very much during those weeks. LOL. He is home now so I kinda have to cook dinner.

Easy Whoopie Pies
Ingredients
- 1/4 cup canola or vegetable oil
- 1 box Pillsbury Brownie Mix
- 1/4 cup all-purpose flour
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 Pkg Pillsbury Chocolate Fudge Frosting
- 2 tablespoons red white and blue sprinkles (or your choice of color combination)
Instructions
- Combine Brownie mix, oil, eggs and vanilla in large bowl with wooden spoon until blended.
- Refrigerate 1 hour or overnight.
- Preheat oven to 350°F.Line baking sheets with parchment paper. Set aside.
- Remove cookie dough from fridge. Using a large ice cream scoop, place dough on to parchment lined cookie sheet, keep dough about 2 inches apart.
- Bake cookies for 10-15 minutes until edges look done. Cool cookies 1-2 minute on pan then remove to cooling rack. Cool completely on wire rack.
- When cookies are cool pipe chocolate fudge frosting on bottom of brownie. Top with second brownie, bottom on top of frosting. Press lightly together (you want the frosting to peek a bit outside the edge of the cookie). Roll edge of whoopie pie in sprinkles. Enjoy.
