I have no qualms telling you how hot it is here in Arizona. Today alone it was 109 degrees. The other day my hubby told me how much our electric bill was and then asked me what it mean I replied “It means it was HOT.” When it is this hot I have absolutely no desire to cook. I don’t want to turn the oven on, no desire to turn the cook top on, don’t even think I want to use the grill. This is where an easy summer meal using a few store bought ingredients and dinner is whipped up in no time. Easy summer wraps are perfect for hot summer nights.
This recipe is fairly easy and if you have never eaten couscous your in for a surprise. I had never used couscous and I think I love it. Its easy to prepare, tasty and delicious. All you do is boil your water put in the couscous, turn off the heat and in about 5 minutes your couscous is fully cooked and ready to eat. I prepared my couscous in the morning before it got to hot and it was perfect for this recipe. Don’t be afraid to try it.
Another new item for me are the TortillaLand® Flour Tortillas I had never purchase uncooked tortillas and I have to say I really like them they are thin and crispy and delicious not to mention just as easy to prepare as pre cooked tortillas.

- 6 ounces Grilled & Ready® Fully Cooked Frozen Chicken Breast Strips, diced and prepared according to package directions
- ½ cup Wish-Bone® Italian Dressing
- ½ (30 ounce) bag TortillaLand® Flour Tortillas (9 tortillas), located in the refrigerated section of the store
- 1 cup dry couscous, cooked according to package instructions
- ¼ cup fresh Italian parsley leaves, packed
- ¼ cup celery leaves, packed
- ½ cup diced green apples
- ½ cup quartered green grapes
- ¼ cup diced celery
- 2 tablespoons crumbled blue cheese
- 2 tablespoons toasted almonds
- Cook couscous according to package instructions.
- Toss couscous, parsley, celery leaves, chicken, apples, grapes, celery, cheese and almonds with Wish-Bone® Italian Dressing; set aside.
- Cook the tortillas according to package instructions. Fill each tortilla with ½ cup of the salad mixture and fold the bottom of the tortilla over the filling and pull towards the fold. Fold in the sides and roll tightly.
