Have you ever included a soft drink in a recipe?? I have in the past but, one I have never used in a baked good is cola. Have you made a Classic Cola Cake? Can you believe I have never made a cola cake? I can’t believe it my self so I had to remedy the situation with this Easy and Delicious Classic Cola Cake.
I did a lot of research to come up with this yummy cake. Some recipes I came across had mini marshmallows in the batter and some did not. I decided to include them in my recipe and I think it added a really nice chewy top layer. Here is a picture of the cake before I put the frosting on. The marshmallows mostly melted into the cake but these ones rose to the top and look nice and toasty.
All in all this cake is a huge hit at my house. Mr. Pinkcakeplate ate 3 pieces before dinner, that’s right before dinner! Then he ate another piece after dinner! And he doesn’t like walnuts! My MIL ate a double piece after dinner and took a HUGE slab of cake home with her for later. So that should tell you how well this cake is liked!
The frosting is my favorite it is a thick fudge like frosting dotted with walnuts. I love walnuts and always have some in my freezer. Now I am not a frosting girl at all, but this is more like candy on top of a layer of melted marshmallows all sitting on top of a moist chocolatey cake. It doesn’t get any better that that! The marshmallow layer is sweet, and chewy and so so good. I have to say this cake is very close to a Texas Sheet Cake in flavor and texture and you do boil some of the ingredients so the technique is similar too.

Coca Cola Cake
Ingredients
- 2 Cups sugar
- 2 Cups all-purpose flour
- 1 Cup Coca-Cola
- 1 ½ Cup small marshmallows
- ½ Cup butter or margarine
- ½ Cup vegetable oil
- 3 Tablespoons cocoa
- 1 Teaspoon baking soda
- ½ Cup buttermilk
- 2 eggs
- 1 Teaspoon vanilla extract
- For Frosting
- ½ Cup butter
- 3 Tablespoons cocoa
- 6 Tablespoons Cola
- 1 box 16-ounces confectioners' sugar
- 1 Teaspoon vanilla extract
- 1 Cup chopped walnuts
Instructions
- Preheat oven to 350 degrees. In a bowl, sift the sugar and flour. Add marshmallows. In a saucepan, mix the butter, oil, cocoa and Coca-Cola. Bring to a boil and pour over dry ingredients; blend well. Dissolve baking soda in buttermilk just before adding to batter along with eggs and vanilla extract, mixing well. Pour into a well-greased 9- by-13-inch pan and bake 35 to 45 minutes. Remove from oven and frost immediately.
- Coca-Cola Cake Frosting
- To make frosting, combine the 1/2 cup butter, 3 tablespoons cocoa and 6 tablespoons of Coca-Cola in a saucepan. Bring to a boil and pour over confectioners' sugar, blending well. Add vanilla extract and walnuts. Spread over hot cake. When cool, cut into squares and serve.
