Sometimes a simple salad is a great meal and this Chopped Cobb Salad with Homemade Blue Cheese Dressing is perfect for any summer menu.
We recently purchased a travel trailer and even with the air conditioning it can get hot inside a camper. I love that this Chopped Cobb Salad can easily be prepared at home or in my little camper. I started with Hillshire Farm® Oven Roasted Turkey Breast and Hillshire Farm® Honey Ham. You can use your favorite Hillshire Farm lunchmeat. I love that I don’t have to worry about artificial flavors, preservatives, or added nitrates/nitrites because Hillshire Farm lunchmeat is made without these ingredients.
We always have Hillshire Farm lunchmeat in our fridge. It is also always on our camping list and goes with us. Today I am trying to stick to the classic Cobb Salad. I also have a delicious recipe for Blue Cheese Dressing. It is a recipe my mother taught me when I was a girl. My mother, just like me, had struggled with her weight. She came up with this recipe during a “low carb” diet phase and let me tell you, it’s a winner. This dressing is so creamy and has that sharp blue cheese bite. The fresh cracked pepper in this dressing adds so much flavor.
The combination of the delicious Hillshire Farm lunchmeat, the bacon, and the shredded cheddar cheese all topped with a creamy homemade Blue Cheese Dressing is soooooo good. I love a good salad and could eat this one every day.
Chopped Cobb Salad
- 4 cups chopped lettuce (I like Iceberg but Romain is good too)
- 4 hard-boiled eggs, peeled and chopped
- 1 Cup grated Cheddar Cheese
- 4 oz Chopped Hillshire Farm Honey Ham
- 4 oz chopped Hillshire Farm Oven Roasted Turkey Breast
- 1/2 cup chopped red onion
- 4 oz Bacon crumbles
- 4 ounce blue cheese crumbles
To assemble salad, add chopped lettuce large serving tray or bowl. Forming rows of each ingredient, assemble chopped egg, chopped ham and turkey, grated cheese, chopped red onion, crumbled bacon and blue cheese. Store covered in the refrigerator until ready to eat. Serve with Homemade Blue Cheese Dressing. Serves 4.
Homemade Blue Cheese Dressing
- 1 Pkg Dry Ranch Dressing Mix
- 1/2 tsp. onion powder
- 1/2 tsp. garlic powder
- 1 tsp fresh ground black pepper
- 1 cup milk (I use whole milk to make it creamier)
- 1 cup mayonnaise
- 1/2 cup blue cheese crumbles
Mix all ingredients in a jar or bowl until blended. Dressing will be lumpy. Refrigerate until needed.
This recipe is so easy and can easily be adapted to your tastes. I would love to make a southwest version of this salad with a homemade Cilantro Ranch dressing, roasted corn and a spicy pepper jack cheese. Or how about a classic chef salad with a creamy Thousand Island dressing with chopped cucumbers, green onions and a delicious Monterey Jack cheese? Oh my, I could go on forever with the flavor combinations, but I always start with Hillshire Farm lunchmeat.
