Today I am using a store bought cheese cake just to make it easy! You want to make sure the cheesecake is frozen but not rock hard. Like I did for my wedding cut the cheesecake in one inch squares, as this is a round cheesecake you can eat the edges!!
Next you melt your chocolate candy melts in the microwave in 30 second intervals, stirring in between until all the candy is melted. Dip one end of a Wilton 4″ lollipop stick into the chocolate and then into the middle of each cheesecake square.
Let it harden for a minute or two then carefully dip the cheesecake square into the melted candy making sure to cover the cheesecake completely.
Gently shake off the excess melted candy and place in holder to let the candy harden. Repeat until all cheesecake pops are covered in chocolate candy.
Once the candy has hardened its time to decorate these pretties! I simply melted more candy melts in colors of my choice in a Wilton Disposable Candy Melting bag I cant tell you how easy these bags are to use! When your done you just throw them away! When the candy is melted just snip the tip off and drizzle over the cheesecake pops! I sprinkled with multi colored sprinkles but you don’t have to! Let this candy harden and your done!

How far can you make these in advance, how long could you store?
Laura says
When I made these for my wedding I made them a month in advance and kept them in the freezer until the day of the event.
