Here are a few things you can use to make those perfect Chocolate Chocolate Chip Muffin Mix Cookies:

Use a cookie scoop to make even and perfect cookies. I love using my cookie scoops for this very reason. I have them in several sizes from itty bitty to ginormous to make just about any size cookie I want. I remember I was teaching a cookie class and wanted to give samples of three different cookies starting with the same basic dough, the class was huge and I didn’t want to be making cookies for ever so I used that itty bitty scoop to make bite size cookies. I was able to make enough samples for the class and only had to make the three different batches of cookie dough. Needless to say that tiny scoop saved my life.

Chocolate Chocolate Chip Muffin Mix Cookies

Ingredients

2 7 oz pkg Chocolate Muffin Mix
1/4 cup butter softened
1/4 cup vegetable shortening
1 teaspoon vanilla extract
1 pkg instant chocolate pudding mix 3.5oz dry
2 eggs
1/2 c. chocolate chips

Instructions

Preheat oven to 350 degrees.
Mix all ingredients in medium bowl until blended. Drop by tablespoon onto parchment covered baking sheet or greased cookie sheet. Bake in preheated oven for 12-14 minutes. Allow to cool for about 3 minutes on cookie sheet then remove cookies and allow to cool completely.
Makes approximately 2 dozen cookies.

Everyone loves cookies, I think I love them because they are so stinkin’ easy to make. Another reason is I usually have everything in my pantry and fridge to make them. Plus with school starting it’s always so nice to have a little treat for a lunch box or after school treat.
