It is still really hot here in Arizona but with Pumpkin Spice Latte’s return to Starbucks has ignited my love of all pumpkin recipes and foods!! I love working with pumpkin it is so easy to incorporate into a recipe and has such great health benefits. After a trip to World Market I found some great ingredients to make the backbone of my newest favorite pumpkin dish!! Pumpkin Gnocchi Carbonara!!
I love the warm inviting flavors of fall, apples, cinnamon, pumpkin and hopefully we’re headed for cooler weather. So a warm pasta dish with some of my favorite harvest flavors is a great way to welcome in fall.
I started with World Market Carbonara Pasta Sauce a few spices and some fresh ingredients, viola, we had one of the tastiest fall pasta dishes!
Now we know that nutmeg and pumpkin are the best of friends so I had to use some freshly grated nutmeg in this dish!! World Market has a great selection of spices some that are even hard to find!! I can spend hours just browsing all the fun international foods World Market offers. I especially love to browse the candy isle so many fun nostalgic and hard to find sweets! But that I will save for another day!!
I added spicy Italian sausage to the dish as well for another layer of flavor and heat!! Some fresh chopped Italian Flat Leaf Parsley and fresh Parmesan cheese on top was the final touch that made the flavors shine!! Serve this with a green salad and bread sticks and you have a great meal. This sauce is great over other types of pasta too.
Pumpkin Gnocchi Carbonara~Recipe
Ingredients
- 1 lb Spicy Italian Sausage crumbled and cooked
- 1 15 oz Jar of World Market Carbonara Pasta Sauce
- 1 C half and half you can use milk
- 1/2 C canned pumpkin puree
- 1/2 t grated fresh nutmeg
- 1/2 t crushed red pepper
- 1 t garlic powder
- salt and pepper to taste
- chopped Italian Flat Leaf Parsley for garnish
- Parmesan Cheese for garnish
Instructions
- Cook sausage until no longer pink and cooked through set aside. Place carbonara sauce, half and half, pumpkin and spices in sauce pan and heat through. Cook gnocchi according to package directions.
- When cooked place sauce over gnocchi and top with sausage, Parmesan cheese and chopped parsley. Enjoy!
